1st Place Cheesecake Rolls!

These are DELICOUS, so delicious that I in fact won 1st place in a cooking contest! 

The best part is they are super easy to make too. The dough is made with store bought flaky biscuits so that already cuts out so much time.

I like to make different variations but this recipe is showcasing blueberries. If in season fresh is always the best option but wild frozen blueberries work especially well because they are so tiny and fit perfectly.

These are a big hit in my home and are showcased on Taste of Home’s website! WOOHOO! So exciting.

OK back to the recipe. The biscuits come already in 8 discs. We will be flattening out into a larger disc, very simply by pressing out with our fingers.

The filling is 1 cup of whipped cream cheese, 3/4 cup of thawed/frozen wild blueberries and 1/2 tbsp. of honey.

Doesn’t that look beautiful?

Fill each biscuit disc.

Fold into a ball and pinch the seams together. 

Brush with butter and bake. Let cool and top with a quick simple icing and powdered sugar. VIOLA!

Look at that! YUMMM. We love theses cheesecakes as dessert or breakfast.

Ingredients

  • 1 can of flaky biscuits from the store
  • 1 cup whipped cream cheese
  • 3/4 cup wild frozen blueberries
  • 1/2 tbsp honey
  • 1/4 cup milk
  • 3/4 cup powdered sugar plus more for sprinkling
  • 1 tbsp sugar
  • 1 tbsp butter, melted
  • 1 tsp lemon juice optional

Instructions

  • Preheat the oven to 350°
  • Open the biscuits can and press the discs flat.
  • In a small bowl combine the cream cheese, honey, and blueberries. Mix.
  • Put a even amount of the blueberry mixture in the center of each disc.
  • Make them as even as possible.
  • Pinch the seam all together. Seal tightly.
  • On a baking sheet lined with parchment or sprayed with cooking spray… line all the rolls. Seam side down.
  • Brush 1 tbsp of melted butter on all the rolls.
  • Bake for 15-18 minutes or until golden brown on top.
  • Let cool for 10 minutes. In the mean time mix together the milk and powdered sugar to make a glaze. If using lemon, add in the glaze mix.
  • Brush on all the rolls.
  • Sprinkle powdered sugar
  • Eat as is, for dessert, or in the morning with coffee.
  • Store in the refrigerator after cooled.
  • ENJOY!
