Buffalo Chicken MEATBALLS

Elevated chicken nuggets is what I call these. Great texture is achieved with panko breading and adding some of the buffalo sauce into the meatball mixture. It makes for a consistent and delicious bite!

The best thing about these cute little meatballs is they are super easy and quick to make. I love to serve as appetizer with homemade blue cheese dressing. You can make the dressing ahead of time if you like.

Server on a large platter with toothpicks and small appetizer plates. The recipe can easily be doubled for large parties or Holidays.

Buffalo Chicken MEATBALLS

Spicy little appetizer meatballs that are so easy and fun to serve. Saucy and tasty, they are sure to be a hit for everyone!

Ingredients

  • 1 lb. Lean ground chicken
  • 3/4 cup panko breadcrumbs
  • 1 egg white
  • 1/2 cup Franks red hot or Louisiana style hot sauce If you like it spicier you can add more
  • 1/2 cup butter
  • 1/4 tsp garlic powder
  • 1/4 tsp. salt
  • 1/4 tsp pepper

Blue cheese dip

  • 1 cup blue cheese crumbles
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 tbsp. buttermilk, heavy cream, or milk (milk may be a bit runny but it is doable)
  • 1 tbsp. lemon juice
  • 1/4 tsp salt
  • 1/8 tsp pepper

Instructions

  • Preheat the oven to 400° and line a baking sheet with parchment paper or spray with non stick cooking spray.
  • Melt the butter in a medium sized bowl in the microwave. (Or stovetop in a small saucepan)
    After melted add the hot sauce and the garlic powder Mix well.
  • Now into a large bowl add the chicken, panko, salt, pepper, egg white, and half of the butter/hot sauce combo.
  • Mix and roll into 25 meatballs. Place on baking sheet.
  • Bake for 25-30 minutes.
  • If you did not already make the blue cheese dip now is a good time or you can skip and use store bought blue cheese dressing or ranch. I DO however really recommend the homemade. SO YUMMY!
  • After the meatballs are finishes, reheat the hot sauce/butter combo and toss the meatballs in the sauce. Serve immediately with the dip.
  • You can garnish with carrot and celery sticks if you would like. It is really great with the dip too.

Blue Cheese Dip

  • Combine all the ingredients. Mix, cover and refrigerate until ready to use.
