Brown sugar glazed carrots

Crisp and sweet delightful side dish that is perfect to serve with so many entrees. I love them with fish, scallops, turkey, chicken, ham… you name it!

This makes a great Holiday side dish. A must for Easter , Christmas, and Thanksgiving in my home. You will find yourself remaking this side over and over! Best of all it’s very simple .

Brown Sugar Glazed Carrots

Ingredients

  • 1 1/2 bags baby carrots or 10- 15 heirloom, peeled
  • 1/2 cup water
  • 1/2 cup vegetable, chicken, or turkey broth
  • 2 tbsp butter
  • 1 tbsp maple syrup
  • 1/2 cup brown sugar
  • salt and pepper to taste
  • 1 tbsp parsley, chopped for garnish optional

Instructions

  • In a saucepan add the carrots, water, and broth. Bring to a boil.
  • Lower to a simmer. Stir off and on for about 8- 10 minutes or until a fork can pierce threw.
  • Safe 1/3 cup of the broth water and then transfer the carrots to a skillet on med-high heat.
  • Pour in 1/3 cup of reserved the broth to the pan.
  •  Add the brown sugar, maple syrup, and butter
  • Stir carefully as to not break the carrots. Cook until all the liquid is dissipated and a nice saucy texture is forming
  • Season with salt and pepper.
  • Give it one more stir and plate. Garnish with chopped parsley.
  • ENJOY!
