Brown Sugar Glazed Carrots

- 1 1/2 bags baby carrots or 10 large carrots, peeled and chopped
- 1/2 cup water
- 1 cup vegetable, chicken, or turkey broth
- 2 tbsp butter
- 1 tbsp maple syrup
- 1 cup brown sugar
- salt and pepper to taste
- 1 tbsp parsley, chopped for garnish optional
In a dutch oven or large, deep pan add the carrots, water, and broth. Bring to a boil.
Lower to a simmer. Stir off and on for about 8- 10 minutes or until a fork can pierce threw.
Add the brown sugar, maple syrup, and butter
Stir carefully as to not break the carrots. Cook until almost all the liquid is dissipated and a nice thick texture is forming
Season with salt and pepper.
Give it one more stir and plate. Garnish with chopped parsley.
