Blueberry Cornbread

Blueberry cornbread
Fluffy and moist, this cornbread is almost cake like with lots of honey and a full cup of blueberries.  

 The best part is this tasty treat comes together so quickly, and you only need a whisk, bowl, and a baking dish! Cornbread is a favorite in my home. Sometimes I use a muffin tin and make them easy for on the go.

The boys get so excited every time I make it, and it never lasts long. I usually stick to savory flavors like cheddar, habanero honey, jalapeno and cornbread waffles. Here are some of those recipes if you would like to try them. 

I was craving something sweet and had blueberries to use up. So here we are now. In addition to blueberries, I sprinkled a light layer of powdered sugar on top and mixed in 3 tablespoons of honey. It created the perfect balance of sweet but not overwhelming. Think of it as a tea cake. It is great for breakfast or as a snack.

How pretty is that? It is done in under 40 minutes from start to finish and I don’t know about you but I love that. 

Blueberries 

I highly recommend using fresh, however if you use frozen, let them thaw first. Pour the excess water from thawing out before adding to the cornbread mix.

Blueberry Cornbread

Ingredients

  • 1/3 cup soft/melted butter
  • 1/2 cup sugar
  • 2 eggs
  • 3/4 cup milk
  • 1 cup All-purpose flour
  • 3 tbsp. All-purpose flour
  • 1/2 cup cornmeal
  • 2 1/4 tsp baking powder
  • 1/2 tsp salt I use sea salt or OSMO toasted vanilla salt
  • 3 tbsp. blueberries
  • powdered sugar topping

Instructions

  • Preheat the oven to 400°
    Grease with butter or spray a large baking pan. About at 9" X 13"
  • Now in a large bowl whisk the butter and sugar.
    Add the eggs and milk. Whisk well.Next is the 1 cup and 3 tbsp of flour, cornmeal, baking powder, salt and honey.
    Mix until well combined.
    Gently fold in the bluberries.
  • Pour into the baking pan.
  • Cook for 25 minutes or until the center is cooked completely.
    You can insert a toothpick in the center and if it comes out clean viola! If not cook a few minutes more.
  • Once done, remove from heat. Let cool slightly and then cut into even squares.
  • Sprinkle on powdered sugar.
