The viral French toast casserole except we are using blueberry bagels because we can do whatever we want!
If you are on Instagram, I have no doubt you have seen many French toast casserole videos and although a classic is always delicious, I wanted to try it with blueberry bagels and WOW I am so glad I did! This dump and bake dish is extremely easy and convenient especially for busy mornings or when you have company and want a dish to feed a crowd.
I like to make butter and brown sugar spread on the bottom to get the bagel pieces all caramelized. It just makes it a little more special too. That goes into a 9 x 13” pan, then the bagel slices, and egg, milk, vanilla extract, cinnamon, and brown sugar mix over the top. A little sprinkle of extra cinnamon/sugar and bake it.

Ingredients:
Makes 8 servings
- 4 blueberry bagels, chopped into bite size pieces. (I used Franz bagels)
- 1 cup brown sugar
- ½ cup butter
- 6 eggs
- 2 cups milk
- 2 teaspoons vanilla extract
- 2 teaspoons cinnamon/divided
- Powdered sugar for topping
- Maple syrup for topping
Directions:
- Preheat the oven to 425°F.
- Butter or spray a 9 x 13” baking dish with non-stick cooking spray.
- In a medium saucepan over medium heat, add the butter. Once melted add 1 cup of brown sugar. Mix until melted and smooth.
- Pour the mixture into the bottom of the baking dish. Spread out evenly.
- Cut the bagels in half and then into bite size pieces. Dump the bagel pieces into the dish and spread out.
- In mixing bowl, combine the milk, eggs, vanilla extract, and 1 tsp of cinnamon. Wisk until blended.
- Pour the mixture over the bagel pieces.
- Sprinkle the remaining 1 tsp of cinnamon and 1 tablespoon of brown sugar over the top.
- Bake for 25-30 minutes.
- Sprinkle with powdered sugar.
- Serve with syrup.
