Blackberry Mousse!

This fresh delightful dessert is a great way to use any fresh fruit like blackberries!

A mousse (French for foam)  is a soft prepared food that incorporates air bubbles to give it a light and airy texture. It can range from light and fluffy to creamy and thick, depending on preparation techniques. Dessert mousse can be eaten as is, frozen into fun shapes, used for cakes or breakfast. I like to use in on top of pancakes or waffles!

Here in the Pacific NW we are famous for our beautiful blackberries as they do exceptionally well in the cool climate. You can drive just about anywhere (even along the highway) and see wild blackberries growing all over. Quite an invasive treat.

As you see I had quite a bit to use up. I visited a local farmers market here in Washington. Bi-Zi farms.

They have so many fresh fruit and vegetables still in season so while I was there I stocked up. As you can see in photo these blackberries are HUGE! Along with delectable mousse I will be making some quick jam too. That post will be soon.

Blackberry Mousse

Fresh fruit turned into a airy dream of a dessert. It can be eaten on its own or used for cakes and even pancakes!

Equipment

  • blender or food processer
  • mixer or hand mixer

Ingredients

  • 1 1/4 cups fresh blackberries rinsed
  • 1 lemon, juiced
  • 1/2 cup powered sugar
  • 1 1/4 cups heavy cream
  • extra berries for topping optional

Instructions

  • In a blender or food processer add the berries, sugar, and lemon juice. Puree until smooth.
  • In a mixer bowl or large bowl to use a hand mixer, pour the berry mix. Now goes the cream.
    Using a whisk attachment, whisk until fluffy and airy. It should stick to the spoon when turned upside down.
    Serve immediately and garnish with fresh fruit, or store in the refrigerator for a couple days.
