Berry-Lavender Lemonade!

This is literally sunshine in a glass!
Every Summer I love to visit a local Lavender farm and swoop up fresh lavender to keep around my home, for cooking, and crafts.

The last 2 years I have been going to Scented Acres Lavender Farm. It is the cutest little spot with a dream flower garden, farm animals and vegetables to purchase.

The farm is decorated so beautifully with antiques and hanging Lavender bundles. It is just a inviting and cozy place. The owner is so kind and helpful. I just love it!

Berry-Lavender Lemonade!

Refreshing strawberry, raspberry, lemonade with lavender. Perfect for Summer!

Ingredients

  • 1 cup fresh squeezed or cold pressed lemon juice
  • 1/2 cup sugar
  • 1/2 cup honey
  • 5 cups filtered water
  • 1 tsp fresh lavender blossoms or 1 tbsp of dried
  • 1 - 2 cup fresh strawberries hulled
  • 1/2 cup fresh or frozen raspberries
  • 1/4 cup sugar
  • fresh sprigs for garnish optional
  • candied lemon peels for garnish optional

Instructions

  • Heat 2 1/2 cups of water on high heat in a saucepan until boiling. Remove from the heat and add the honey. Mix until dissolved. Now add the sugar. Mix until it also has dissolved
  • Put the lavender in tea ball and let steep in the honey/sugar mix for 20-30 minutes. Depending on how strong of a lavender flavor you want to achieve. If you don't have a tea ball just add the lavender and strain out the blossoms. Discard the blossoms.
  • While the lavender is steeping lets make the berry blend.
  • Now in the blender add the strawberries and raspberries with 1/4 cup of sugar, 1/4 cup water, and puree.
  • In pitcher, add the lemon juice, Infusion mixture, berry mixture, and 2 1/2 cups of cold filtered water.
  • Put in the refrigerator until ready to use.
  • To serve, wet the rim of the glass and coat with sugar. You can put some on a small plate and roll the rim of the glass to coat.
    Now add ice to a glass, and pour the lemonade over. Garnish with a lavender and candied lemon peels, fresh mint, lemon slices or even lemon head candy is a fun one!
