BBQ Chicken Stromboli

Do you like BBQ chicken pizza? Then you will love this!

A semi-homemade stuffed pizza roll that is made with a store bought rotisserie chicken and pizza dough. This cuts prep time in half and makes a great and easy meal!

Stromboli is usually a type of baked turnover filled with various Italian cheeses and usually Italian cold cuts or vegetables served hot. The dough used is either Italian bread dough or pizza dough. Stromboli was invented by Italian-Americans. However here we will be making BBQ chicken pizza-style Stromboli and it is delightful. Mozzarella cheese, garlic oil, and red onions, all wrapped up like a pizza sandwich.

I love to make these for dinner and serve with a Caesar salad. My family loves these with pepperoni and traditional pizza sauce too. The fun part about this recipe is I mix BBQ sauce and pizza sauce to spread on as the base. It is so tangy and perfect with the BBQ chicken! You can serve them with extra parmesan cheese sprinkled on top. I dip mine in marinara/pizza sauce.

Buying store-bought pizza dough makes this a very easy recipe. 1 dough ball makes 3 Stromboli’s.

Ingredients

  • 1 store bought rotisserie chicken, skin removed and chopped into bite size pieces.
  • 1 store bought pizza dough ball I buy ready to bake from the deli area.
  • 1/4 cup red onion, chopped small
  • 1/2 cup marinara/pizza sauce
  • 1 1/2 cups BBQ sauce
  • 1 tsp minced garlic
  • 1/4 cup olive oil
  • salt and pepper
  • shredded mozzarella
  • parmesan cheese, grated
  • 1/2 tsp dried oregano
  • 1 tbsp. corn meal

Instructions

  • To start, let the dough ball sit out at room temperature for 20 minutes.
  • Preheat the oven to 425° and line a baking sheet with parchment paper. Sprinkle the cornmeal over the paper.
  • After you have removed the skin and chopped the chicken, add it to a large saucepan/pot.
    On medium heat, season with salt, pepper, 1/2 cup water, and 1 cup of BBQ sauce. Cook for 20 minutes.
    Stirring occasionally.
    Then set aside after 20 minutes.
  • While the chicken is cooking, lets get the dough ready.
  • Sprinkle some flour on a clean work surface and lay out the dough. Form it into a oblong shape and cut into 3 even pieces.
  • Form into 3 balls and flatten out into a disc shape. Then let them sit for 5 minutes to warm up and be pliable.
  • Now as you would make a pizza, roll out the dough with a rolling pin into a oval shape. Continue with the other 2 and set aside.
  • Mix the garlic and olive oil together and brush the dough with the oil. Leaving a 1/2 inch border all around.
    Repeat with the other 2.
  • In a small bowl, mix together the remaining 1/2 cup BBQ sauce and 1/2 cup marinara sauce.
  • Spread the desired amount of sauce on the dough. Leave a half a inch of sauce on around the edges.
  • Next we will scoop on some chicken, mozzarella, onions, parmesan cheese, and some oregano.
  • Roll the dough like a burrito. and move to the baking sheet.
    Make 2 slits on the top of the dough to let it vent. Repeat with the other 2.
  • Bake for 20-25 minutes.
  • Let cool and cut into 3 pieces.
  • You can sprinkle on extra parmesan cheese if you like and dip into marinara.
