1store bought rotisserie chicken, skin removed and chopped into bite size pieces.
1store bought pizza dough ballI buy ready to bake from the deli area.
1/4cupred onion, chopped small
1/2 cup marinara/pizza sauce
1 1/2cupsBBQ sauce
1tspminced garlic
1/4cupolive oil
salt and pepper
shredded mozzarella
parmesan cheese, grated
1/2tspdried oregano
1tbsp.corn meal
Instructions
To start, let the dough ball sit out at room temperature for 20 minutes.
Preheat the oven to 425° and line a baking sheet with parchment paper. Sprinkle the cornmeal over the paper.
After you have removed the skin and chopped the chicken, add it to a large saucepan/pot. On medium heat, season with salt, pepper, 1/2 cup water, and 1 cup of BBQ sauce. Cook for 20 minutes. Stirring occasionally. Then set aside after 20 minutes.
While the chicken is cooking, lets get the dough ready.
Sprinkle some flour on a clean work surface and lay out the dough. Form it into a oblong shape and cut into 3 even pieces.
Form into 3 balls and flatten out into a disc shape. Then let them sit for 5 minutes to warm up and be pliable.
Now as you would make a pizza, roll out the dough with a rolling pin into a oval shape. Continue with the other 2 and set aside.
Mix the garlic and olive oil together and brush the dough with the oil. Leaving a 1/2 inch border all around. Repeat with the other 2.
In a small bowl, mix together the remaining 1/2 cup BBQ sauce and 1/2 cup marinara sauce.
Spread the desired amount of sauce on the dough. Leave a half a inch of sauce on around the edges.
Next we will scoop on some chicken, mozzarella, onions, parmesan cheese, and some oregano.
Roll the dough like a burrito. and move to the baking sheet. Make 2 slits on the top of the dough to let it vent. Repeat with the other 2.
Bake for 20-25 minutes.
Let cool and cut into 3 pieces.
You can sprinkle on extra parmesan cheese if you like and dip into marinara.
