Air Fryer Crispy Lemon Chicken

This dish has it all, crispy outside, juicy center, a smack of citrus, and a dab of cheesy goodness!

The air fryer gives that perfect crunch you get with a oil fried chicken but without all the fat! If you do not have a air fryer you could bake but it won’t quite have the same crunchiness. The flavor is fantastic either way.

I like to serve with a fresh salad and roasted vegetables.

Air Fryer Crispy Lemon Chicken!

Ingredients

  • 3 chicken breasts, halved lenght wise, and smashed thin. 1/4 inch
  • 1 cup panko breadcrumbs
  • 2 eggs
  • 2 lemons
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup parmesan cheese, shredded
  • 2 tbsp flour
  • 1 tbsp oregano
  • 1 tbsp lemon zest
  • 1/2 tsp garlic powder
  • 1/4 tsp pepper
  • 1/2 tsp salt
  • 1 tbsp chopped parsley for garnish optional

Instructions

  • In shallow bowls or plates add the flour to one, egg to another, and the panko to the 3rd. This is the dredging station.
  • Squeeze half a lemon into the egg mixture and beat. Now add the oregano and garlic powder to the bread crumbs and stir. Salt and pepper the chicken breasts on both sides
  • Working one at a time, dip the chicken in the flour and coat on both sides, shake off excess. Then dip into the egg, coat both sides, drain excess and move to the bread crumbs. Coat both sides well. Make sure its coated all over. Continue with the remaining breasts.
  • Set the air fryer to 400° Place the breasts in and try not to overlap too much. Cook for 15 minutes then flip. Cook for 15 more or until done.
  • After its finished cooking you can add the cheese to the tops and pop back in to melt, just a couple minutes.
  • Transfer to a baking sheet or serving plate and squeeze the other half of the lemon on the chicken, the lemon zest and cut the remaining lemon into wedges for garnish and additional flavor to be squeezed on before eating.
