Ingredients (Serves 2–3)
- Chicken: 1–1.25 lbs chicken breast or thighs, sliced
- 1–2 tsp Pineapple Sriracha seasoning (Blackstone blend)
- 1 tbsp oil
- Pineapple Sriracha Stir-Fry Sauce:
- 1 cup pineapple juice
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 2 tbsp honey or brown sugar
- 1½–2 tsp Pineapple Sriracha seasoning
- 1 tsp minced garlic
- 1 tsp grated ginger
- Optional: 1–2 tsp sriracha (for more heat)
- 1 tbsp cornstarch + 1 tbsp water (slurry)
- Bowl Base & Toppings:
- White or jasmine rice
- Bell peppers & carrots
- Pineapple rings or chunks
- Green onions
- Sesame seeds
- Lime wedges
Instructions: All on the Blackstone
- Prep the Sauce: In a small bowl, whisk pineapple juice, soy sauce, rice vinegar, honey or brown sugar, Pineapple Sriracha seasoning, garlic, ginger, and sriracha if using. Stir in cornstarch slurry and set aside.
- Fire Up the Blackstone: Preheat your Blackstone griddle. Drizzle oil over the surface.
- Veggie Sizzle: On medium-low heat, toss sliced bell peppers and carrots onto one side. Let them cook, stirring occasionally, until they’re vibrant and tender.
