Zesty Pizza Sauce Recipe (Large Batch-Fresh Tomatoes)

Ingredients

  • 15–25 lbs tomatoes (heirloom and Roma mix, ~22 large tomatoes)
  • 6–10 whole garlic cloves, peeled
  • 2 tbsp olive oil
  • 1 tsp red pepper flakes
  • 2 tbsp Italian seasoning
  • 1 tsp onion powder
  • 2 tsp salt 2 tsp black pepper
  • 6 oz tomato paste
  • ¼ cup fresh basil, chopped (or 1 tbsp dried)

Instructions

  1. Prep the Tomatoes Slice a shallow “X” on the bottom of each tomato.
  2. Boil in water for 1 minute, then transfer immediately to cold water and peel off the skins.
  3. Then chop into small pieces, discarding the cores/pits. 
  4. Sauté the Garlic In a large stock pot, heat 2 tbsp olive oil over medium heat. Add whole garlic cloves and sauté until fragrant and lightly golden (about 2–3 minutes).
  5. Add Seasonings and Tomato Paste Stir in: Red pepper flakes Italian seasoning Onion powder Salt and pepper Tomato paste Mix well to combine and let it cook for 2–3 minutes to deepen the flavor.
  6. Add Tomatoes and Basil Add the chopped tomatoes and fresh basil. Stir thoroughly and bring to a gentle simmer.
  7. Cook Down Simmer uncovered for 30–40 minutes, stirring occasionally. The tomatoes will break down and release their juices.
  8. Blend Use a handheld immersion blender or transfer in batches to a stand blender.
  9. Blend until smooth or to your desired consistency.
  10. Final Simmer -Return to the pot and continue cooking for another 30–40 minutes, stirring occasionally. Cook until the sauce thickens to your liking.
  11. Cool and Store Let the sauce cool completely.
  12. Pour into steriled jars or freezer bags.
Stores for 1 week refrigerated and 6 months in the freezer.
