Zesty Greek Pasta Salad

This cold pasta salad is so tasty and so easy!

Made with simple and affordable ingredients, it is always a favorite during the warmer months at parties. We start with cooked and chilled rotini pasta, fresh cherry tomatoes, bell pepper, olives, red onion, parsley, and feta.

The dressing is made of zesty Italian dressing, olive oil, lemon zest, lemon juice, salt and pepper.

Toss together and refrigerate. It is SO GOOD!

I like to keep in refrigerated for a couple hours before serving. It really makes a great lunch pasta or side dish. The dressing is one I love to use as a marinade for chicken, on green salads and even for a yummy dip. The best part of this dish is that you can add or take out any vegetables you like. Mushrooms go well, and fresh basil is a lovely addition too.

Ingredients

  • 1/2 box rotini pasta, cooked and cooled
  • 1/2 bell pepper chopped into small pieces I like yellow
  • 15 cherry tomatoes, halved
  • 1/4-1/2 cup red onion, chopped small
  • 8-10 halved or sliced olives black or green
  • 1/4 an bunch of chopped parsley stems removed
  • 1/2 lemon, zested, and juiced
  • 1/2 -1 cup feta cheese
  • 1/4 cup zesty Italian dressing
  • 1 tbsp olive oil
  • 1/4 tsp pepper
  • 1/4 tps salt I like pink for this dish

Instructions

  • Cook the pasta for 8 minutes in a rolling boil of water that has been salted with 1/2 tbsp salt.
    Drain, add to a large serving bowl and refrigerate.
  • Prep all of the vegetables and herbs.
  • Now the dressing. Whisk the zest, juice, Italian dressing, oil, salt, and pepper in a small bowl. Set aside.
  • Now combine all the ingredients. Mix well.
  • Refrigerate for at least 2 hours and try not to eat it all.
  • ENJOY!
