Bring a large pot of water to boil, add the peaches a boil for 2 minutes. Now move to a ice bath and let them cool slightly
Now peel the peaches. I use a potato peeler. After peeled, cut into thin pieces
To make the syrup we will start by bringing 2 cups of water to boil, add the sugar, cinnamon, and vanilla. After the sugar dissolves add the the peaches, and whiskey. Cook for about 8 minutes.
Transfer the peaches to a large bowl with slotted spoon/spatula. Now continue cooking the syrup for 15 minutes or until the liquid has reduced by half.
Let the syrup cool and then pour over the peaches
Use right away as toppings or filling. To store you can keep refrigerate for about a week or can be canned for up to 3 months!
