Whiskey Peaches!

Delicious peaches boiled and cooked in a whiskey-cinnamon syrup that can be used for dessert toppings or pie fillings!

Ingredients

  • 6 fresh peaches
  • 1 1/4 cups sugar
  • 1 tsp vanilla extract
  • 1/2 cup whiskey
  • 1 tsp cinnamon

Instructions

  • Bring a large pot of water to boil, add the peaches a boil for 2 minutes. Now move to a ice bath and let them cool slightly
  • Now peel the peaches. I use a potato peeler. After peeled, cut into thin pieces
  • To make the syrup we will start by bringing 2 cups of water to boil, add the sugar, cinnamon, and vanilla. After the sugar dissolves add the the peaches, and whiskey. Cook for about 8 minutes.
  • Transfer the peaches to a large bowl with slotted spoon/spatula. Now continue cooking the syrup for 15 minutes or until the liquid has reduced by half.
  • Let the syrup cool and then pour over the peaches
  • Use right away as toppings or filling. To store you can keep refrigerate for about a week or can be canned for up to 3 months!
