Stuffed Mushrooms
Golden bites of juicy sausage with herbs, garlic, and toasty breadcrumbs. Filling and always a winner at parties!

- 3/4- 1 lb. Mild Italian sausage I recommend getting it fresh from the butcher
- 16 white mushrooms, washed and stems removed
- 3 tbsp. olive oil
- 2 cloves minced garlic
- 4 green onions, minced
- 1/2 cup parmesan cheese, grated
- 1 cup panko breadcrumbs
- 1/2 tsp. black pepper
- 1/2 tsp. salt
- 1/4 tsp. thyme
- 2 tbsp. parsley, minced plus more for garnish (optional)
Pre-heat the oven to 325°
In a pan brown the sausage, drain. Add a little olive oil to the pan, then the garlic, green onions, salt, pepper, and thyme. Cook for 2 minutes then set aside.
Remove the mushroom stems, wash the mushrooms, and pat dry.
To the sausage mixture add the parmesan cheese, parsley, and 3/4 of the breadcrumbs. Stir well to combine.
Stuff each mushroom and fill as much as possible.
Place in a 13x9 baking dish. Then top each mushroom with the remaining breadcrumbs.
Drizzle on some olive oil and bake, 45-50 minutes or until golden and the top is crusty.
Let cool and serve with a extra sprinkle of parsley.
