Ingredients
2chicken breasts, cut into bite size pieces
1large red bell pepper, sliced into thin strips
1large yellow bell pepper, sliced into thin strips
1orange bell pepper, sliced into thin strips
1large white or yellow onion, sliced thin
1/4cupvegetable oil
1tbsp.chili powder
1/2tspcumin powder
1/2tspgarlic powder
1tsporegano
2tsptajin seasoning
1/2tspsalt
1/2tsppepper
1package of fajita sized flour tortillas
1lime, cut into wedges
beans and rice for sides. optional
Instructions
Preheat the oven to 400°
In mixing bowl add the chopped chicken and the sliced onion/bell peppers
Next add all the seasonings and oil. Mix well so that all is coated
Pour onto a parchment lined baking sheet. Cook for 30 minutes. At the last 10 minutes of cooking I like to put the tortillas in aluminum foil, fold up and toss on the baking rack. This lets them heat up and will be ready the same time!
I like to serve on the sheet with lime wedges. Let everyone grab a plate and assemble.
