Preheat the oven to 425°Begin by mixing the parmesan and panko together in a bowl that is shallow enough for dredging the chicken. Crack the eggs into another shallow bowl.
Cut the breasts in half, lengthwise.
Season the breasts evenly with salt and pepper on both sides.
1st dip the breast in the egg then flip to coat on both sides.
Repeat in the panko breading pressing the mixture into the chicken.
Set on a cooking sheet with foil or parchment.
Repeat with all the chicken and place in the oven for 15-20 minutes.
While the chicken is cooking lets start the dressing.
In a medium sized bowl mix together lemon, zest, honey, dill, oil and whisk. Add the feta and mix. Set aside.
Flip after 15-20 minutes. And cook until done. 10- 20 minutes more depending on breast size and thickness.
Plate. Now top the chicken with the dressing. Sprinkle the parsley and serve!
