Grecian Chicken w Lemon and Feta cheese Dressing

Greek style chicken covered in a parmesan panko crust with a delightful citrus feta dressing!

Ingredients

  • 3 breasts Chicken, cut in half lengthwise
  • 1 1/2 cups panko breading
  • 1 cup parmesan cheese, grated
  • 2 eggs
  • 1 tsp salt
  • 1 tsp pepper
  • 1 lemon, juiced
  • 2 tsp lemon, zest
  • 1 tsp honey
  • 4 tbsp feta cheese
  • 1 tbsp dill, dried or fresh, chopped
  • 1 1/2 tsp olive oil
  • 1 tbsp parsley, chopped optional

Instructions

  • Preheat the oven to 425°
    Begin by mixing the parmesan and panko together in a bowl that is shallow enough for dredging the chicken.
  • Crack the eggs into another shallow bowl.
  • Cut the breasts in half, lengthwise.
  • Season the breasts evenly with salt and pepper on both sides.
  • 1st dip the breast in the egg then flip to coat on both sides.
  • Repeat in the panko breading pressing the mixture into the chicken.
  • Set on a cooking sheet with foil or parchment.
  • Repeat with all the chicken and place in the oven for 15-20 minutes.
  • While the chicken is cooking lets start the dressing.
  • In a medium sized bowl mix together lemon, zest, honey, dill, oil and whisk. Add the feta and mix. Set aside.
  • Flip after 15-20 minutes. And cook until done. 10- 20 minutes more depending on breast size and thickness.
  • Plate. Now top the chicken with the dressing. Sprinkle the parsley and serve!
