Beef Yakisoba Stir Fry

Savory stir fry with steak, vegetables, udon noodles, and a homemade sauce. It is worthy of weeknight rotation.

Ingredients

  • 1 pound sirloin steak, sliced into strips or cubes Or what you prefer
  • 1 yellow or red bell pepper, sliced in thin strips
  • 1/2 cup mushrooms, sliced thin I like crimini, or bella
  • 1 cup broccoli, chopped
  • 1 package udon noodles

Yakisoba sauce

  • 1/2 cup soy sauce
  • 2 tbsp. vegetable oil Plus more for frying
  • 2 tbsp. lemon juice
  • 2 tbsp. sugar
  • 1 tsp. garlic, minced
  • 1 tsp. ginger paste
  • 1/2-1/4 tsp. red pepper flakes
  • 1 tbsp. sesame seeds
  • 2 green onions, sliced thin

Instructions

  • Start by preppin/slicing all the vegetables and steak.
  • Now lets mix up the sauce. In a small bowl, add the soy, sugar, vegetable oil, lemon, garlic, ginger, red pepper flakes, sesame seeds, and green onions. Mix until well comined. Set aside
  • Put a large wok or skillet on med-high heat and add a good amount of vegetable oil. About 2 tbsp.
  • In goes the beef to the hot wok. Season well with salt and pepper.
    Stir off and on while letting the steak cook.
  • After the steak is no longer pink, pull the steak out of the wok and place on a plate. (We will add back in)
  • Now goes the vegetables. Add about 2 more tbsp. of vegetable oil to the hot wok and toss in the vege mix. Stir well.
  • Cook the vegetables for 5-6 minutes. It should start to get a nice char going.
    Add 1 tbsp of water to the wok and stir the vegetables.
  • Its time for the noodles. Follow the package instructions and microwave them in the pouch for 1 minute or run under hot water to loosen up.
  • Push the vegetables to the sides of the wok, creating a hole for the noodles.
  • Add the noodles to the middle of the pan and then pour on the sauce. (Give the sauce a good stir first)
  • Start mixing it all together. The sauce will loosen the noodles.
  • Now we add the beef back and mix it all together. Turn the heat to high and get it all sauced up!
    Continue to stir and let the sauce thicken. About 2 minutes.
  • Serve immediatly.
