A soft, chewy, and delightful cookie filled with coconut flakes and white chocolate chips. Then finished off with a white chocolate drizzle and some sprinkles. Â
These cookies are so yummy! They mix up quickly and are fun for the kids to help decorate. I like to use edible stars and sprinkles. You can get festive colors and make it great for the holidays too. I buy my edible stars online. There are so many fun edible glitters available.Â
This recipe doesn’t require too much time and is fairly easy to make. Â

Ingredients:
- 1 (1 lb.) Sugar cookie mix
- 1/2 cup butter, melted
- 1 cup coconut flakes
- 1 egg
- 1 2/3 cup white chocolate baking chips (vanilla)
- 1/2 tsp. coconut extract
- 1 tsp vegetable oil
- Decorating sprinkles
Directions:
- Preheat the oven to 375°F.
- Line a baking sheet with parchment paper.
- In a standing mixer or large bowl, add the sugar cookie mix, butter, egg, coconut, coconut extract, and 1 cup of the baking chips.Â
- Mix until a soft dough forms.
- Drop the dough by round 1 teaspoonfuls onto a baking sheet. 1 inch apart.
- Bake for 9 minutes or until light golden brown on the edges.
- Let cool for 1 minute and then move to a cooling rack for 15 minutes.
- Decorate. In a microwave safe bowl add the remaining 2/3 cup of baking chips.
- Heat in the microwave for 30 seconds then stir.
- Heat for 15 seconds more and stir. If they are not melted all the way do another 15 minutes. It is important to do in short spirts or it will burn. Just be patient. It will be worth it.
- Using a fork drizzle the chocolate over the cookies and decorate immediately with the sprinkles.
