Weeknight Dirty Keto Marinara and Meatballs

Dirty because I only follow so much of the keto diet and easy because all you need to do is roll on over to the frozen section of Costco and buy their giant bag of meatballs… They are only 4 net carbs for 5 balls, woohoo!

This recipe is so easy and soooo dam delicious! I like to serve it with a “olive garden” style salad. Iceberg, tomatoes, olives, banana peppers, red onion, parm, and some italian dressing with some fresh cracked pepper.

Ok back to the balls… I like to pan fry in a cast iron to achieve that perfect crust on the outside and juicy inside. You can also bake them if you choose and they are still delicious.

Let’s get started this easy dish is done from start to finish in under 20 minutes!

Ingredients:

  • 24- 32 meatballs from frozen bag of Italian meatballs or more depending on how many servings. I do about 8 meatballs per person.
  • 1 tsp olive or avocado oil
  • 1 can Italian style diced tomatoes
  • 2 cloves garlic, minced
  • 2 tsp oregano, chopped
  • 2 tsp basil, chiffonade
  • 1/4 cup mozzarella cheese, shredded
  • 1/4 cup parmesan cheese, shredded
  • salt and pepper to taste

Directions:

Pre-heat oven to 450.

Heat a cast-iron pan on med-high heat, add 1 tsp olive oil. Add meatballs and cook for 10 minutes or until golden brown. While cooking heat a small saucepan on med-high heat, add the can of tomatoes, oregano, salt, pepper and garlic. Using a potato masher or fork squish/mix the tomato mixture, cook down for 5-8 minutes. When the meatballs are browned turn heat off, pour the marinara on top, add mozzarella and then parmesan cheese. Bake in the oven until the cheese melts and gets all bubbly and gooey. Remove from the oven and let rest for 5 or so minutes. Top with fresh basil …
