Ingredients
- 1Â 9 oz package store-bought cheese tortellini (can double and use the family size package if need be)
- 1 large boneless, skinless chicken breasts, cut into bite size pieces
- ¼ onion or shallot, chopped small
- 1/2 tsp salt
- ½ tsp pepper
- ¼ tsp red pepper flakes
- 1Â 24.5 oz Passata tomato puree
- 1 1/2 cups chicken broth
- 1/3 cup of vodka
- 1 tbsp tomato paste
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper, to taste
- Fresh basil leaves, for garnish
Preparation
Step 1: Cook the Chicken
- Season the chicken breasts with salt and pepper.
- Heat the olive oil in a large skillet big enough to fit everything over medium heat.
- Add the chicken breasts and cook until golden brown and cooked through, for about 5-6 minutes,
- Remove the chicken from the skillet and set aside.
Step 2: Make the Sauce
- In the same skillet add 1 tbsp oil, onion, minced garlic, Sauté until fragrant, about 1 minute.
- Sprinkle on the salt, pepper, and red pepper flakes.
- Pour in the tomato sauce, vodka, and broth. Turn the heat to med- high.
- Add the tortellini.
- Cover with a lid and boil for 6 minutes.
- After 6 minutes, remove the lid and stir.
- Add the grated Parmesan cheese and heavy cream.
- Stir until it is melted and incorporated.
- Add the chicken back in the skillet.
- Give the sauce a quick taste and add salt and pepper if needed.
- Serve immediately.
- Garnish with extra parmesan and chopped basil. (optional)

- Store leftover vodka sauce tortellini in an airtight container in the refrigerator for up to 3 days.
Reheating
- Reheat the dish in a skillet over medium heat, adding a splash of cream to revive the sauce.
