Vodka Sauce Tortellini – One Pan- 30 Minutes

Vodka sauce tortellini with store-bought tortellini and chicken breast is a quick and easy way to enjoy a gourmet meal at home.

Ingredients

  • 1  9 oz package store-bought cheese tortellini (can double and use the family size package if need be)
  • 1 large boneless, skinless chicken breasts, cut into bite size pieces
  • ¼ onion or shallot, chopped small
  • 1/2 tsp salt
  • ½ tsp pepper
  • ¼ tsp red pepper flakes
  • 1  24.5 oz Passata tomato puree
  • 1 1/2 cups chicken broth
  • 1/3 cup of vodka
  • 1 tbsp tomato paste
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Fresh basil leaves, for garnish

Preparation

Step 1: Cook the Chicken

  • Season the chicken breasts with salt and pepper.
  • Heat the olive oil in a large skillet big enough to fit everything over medium heat.
  • Add the chicken breasts and cook until golden brown and cooked through, for about 5-6 minutes,
  • Remove the chicken from the skillet and set aside.

Step 2: Make the Sauce

  • In the same skillet add 1 tbsp oil, onion, minced garlic, Sauté until fragrant, about 1 minute.
  • Sprinkle on the salt, pepper, and red pepper flakes.
  • Pour in the tomato sauce, vodka, and broth. Turn the heat to med- high.
  • Add the tortellini.
  • Cover with a lid and boil for 6 minutes.
  • After 6 minutes, remove the lid and stir.
  • Add the grated Parmesan cheese and heavy cream.
  • Stir until it is melted and incorporated.
  • Add the chicken back in the skillet.
  • Give the sauce a quick taste and add salt and pepper if needed.
  • Serve immediately.
  • Garnish with extra parmesan and chopped basil. (optional)

Storage

  • Store leftover vodka sauce tortellini in an airtight container in the refrigerator for up to 3 days.

Reheating

  • Reheat the dish in a skillet over medium heat, adding a splash of cream to revive the sauce.
