Tuscan Tortellini – One Pan- 30 Minutes

Tortellini is a versatile pasta that can be used in various dishes. That is why I have started a Tortellini Series of ONE POT dishes that can be done in 30 minutes or less!

A perfect way to bring a taste of Tuscany onto your plate with the convenience of store-bought tortellini. This dish is a delightful blend of creamy, cheesy, and fresh flavors that make it a favorite for many.

Ingredients

  • 1 package of store-bought tortellini (I use the family size but you can use a smaller package if need be)
  • ½ pound mild Italian sausage
  • ¼ yellow or red onion, chopped small
  • ½ red bell pepper chopped small
  • 2 cups of vegetable broth (chicken or beef broth works well too)
  • ¾ cup of heavy cream
  • 1/2 cup of grated Parmesan cheese
  • 1/4 cup of sun-dried tomatoes (chopped)
  • 1 cup of fresh spinach (chopped)
  • 2 cloves of garlic (minced)
  • 1 tablespoon of olive oil
  • ¼ tsp onion powder
  • ¼ tsp cayenne pepper
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)

Instructions

Prepare the Sausage

  • In a large skillet big enough to hold all the ingredients add the sausage over medium heat.
  • Cook until it is no longer pink. Move to a small plate with a paper towel on it to drain off the grease.
  • Wipe out the skillet with a paper towel.

Now onto the rest.

  • In that same skillet, heat the olive oil over medium heat.
  • Add the onion and cook for about 2 minutes.
  • Add the minced garlic and sauté until fragrant, about 1 minute.
  • Next goes the bell pepper.
  • Cook for 2 minutes more.
  • Season with salt, pepper, onion powder, paprika, cayenne pepper, and sun dried tomatoes. Mix everything together.
  • Add the pasta to the pan. Then goes 2 cups of broth. Mix and cover with a lid.
  • Let it simmer for about 5-6 minutes.
  • Pour in the heavy cream, add the sausage back, and chopped spinach. Stir well until all is combined.
  • Add the  grated Parmesan cheese.

Serve the Dish

  • Transfer the Tuscan tortellini to a large serving dish.
  • Garnish with fresh basil leaves and extra parmesan. (Optional)
  • Serve immediately and enjoy the rich and creamy flavors of this Tuscan-inspired dish.

Storage and Reheating

  • Storage: Store leftover Tuscan tortellini in an airtight container in the refrigerator for up to 3 days.
  • Reheating: Reheat the dish in a skillet over medium heat, adding a splash of cream to revive the sauce.
