Gnocchi smothered in an amazing, developed sauce that will take you to Tuscany in one bite!
I love a good Tuscan style sauce, and this is one of my all-time favorites. It is rich and a bit spicy with so much flavor! The Italian sausage works so well with the gnocchi and of course I like to finish it up with fresh grated parmesan cheese.

Let us get right to it!
Ingredients:
Makes 4 servings
- 1lb Gnocchi or half my homemade recipe
- ½ pound mild Italian sausage
- ½ tsp salt
- 1/2 tsp pepper
- 1/4 tsp onion powder
- 1/4 tsp garlic powder
- 1/4 tsp cayenne pepper
- 142 tsp paprika
- 2 tbsp extra virgin olive oil
- 2 tbsp butter
- 1/4 onion diced small white or yellow onion
- 1/2 red bell pepper, diced
- 2 garlic cloves, minced
- 1 1/2 cups heavy cream
- ¼ cup vegetable or chicken broth
- 2 tbsp tomato paste
- 1/4 cup sun-dried tomatoes, chopped
- 1-2 cups fresh spinach
- 1/2 cup parmesan cheese, grated
Directions:
- Cook gnocchi and set aside.
- In a large skillet, cook the Italian sausage over medium heat until no longer pink. Chop it into bite size pieces as you brown it.
- Move to a plate lined with a paper towel.
- In the same skillet add the butter and oil.
- Now goes the onion, garlic, and bell pepper.
- Saute until translucent. About 2-3 minutes.
- Add the tomato paste and stir well. Cook for 1 minute.
- Add the spices. Salt, pepper, garlic powder, onion powder, cayenne pepper, and paprika. Stir well.
- Next to the pan is the heavy cream and sundried tomatoes. Stir well.
- Now we add parmesan cheese and spinach.
- Mix it all up and now we add the gnocchi.
- Toss it all together until the sauce coats the gnocchi then add ¼-½ cup of broth. After the sauce thickens and coating everything it is ready to eat.
- Serve with fresh grated parmesan cheese.
