Gnocchi smothered in an amazing, developed sauce that will take you to Tuscany in one bite! Â
I love a good Tuscan style sauce, and this is one of my all-time favorites. It is rich and a bit spicy with so much flavor! The Italian sausage works so well with the gnocchi and of course I like to finish it up with fresh grated parmesan cheese. Â Â

Let us get right to it!Â
 Ingredients:Â
Makes 4 servingsÂ
- Â 1lb Gnocchi or half my homemade recipe Â
- ½ pound mild Italian sausage Â
- ½ tsp salt Â
- 1/2 tsp pepperÂ
- 1/4 tsp onion powderÂ
- 1/4 tsp garlic powderÂ
- 1/4 tsp cayenne pepperÂ
- 142 tsp paprikaÂ
- 2 tbsp extra virgin olive oilÂ
- 2 tbsp butterÂ
- 1/4 onion diced small white or yellow onionÂ
- 1/2Â red bell pepper, dicedÂ
- 2Â garlic cloves, mincedÂ
- 1 1/2 cups heavy creamÂ
- ¼ cup vegetable or chicken broth Â
- 2 tbsp tomato pasteÂ
- 1/4 cup sun-dried tomatoes, chopped Â
- 1-2 cups fresh spinachÂ
- 1/2 cup parmesan cheese, gratedÂ
 Directions:Â
- Â Cook gnocchi and set aside. Â
- In a large skillet, cook the Italian sausage over medium heat until no longer pink. Chop it into bite size pieces as you brown it. Â
- Move to a plate lined with a paper towel. Â
- In the same skillet add the butter and oil. Â
- Now goes the onion, garlic, and bell pepper. Â
- Saute until translucent. About 2-3 minutes. Â
- Add the tomato paste and stir well. Cook for 1 minute. Â
- Add the spices. Salt, pepper, garlic powder, onion powder, cayenne pepper, and paprika. Stir well. Â
- Next to the pan is the heavy cream and sundried tomatoes. Stir well. Â
- Now we add parmesan cheese and spinach. Â
- Mix it all up and now we add the gnocchi. Â
- Toss it all together until the sauce coats the gnocchi then add ¼-½ cup of broth.  After the sauce thickens and coating everything it is ready to eat. Â
- Serve with fresh grated parmesan cheese. Â
