Breakfast burritos have to be one of the best foods ever and I tell you, I LOOVE to make them.
Burritos in general are just all around pretty fabulous. There was this a hole in the wall restaurant here In Portland Oregon that had the beeeest burritos and dam good drinks too. It was called Santeria and I still dream about their food. Sadly the owner /cook passed away and it was sold. The menu is just not the same. They made this red sauce that went on burritos, enchiladas, and chimichangas that WAS SO good… I am still trying to get mine as perfect, but that’s another post.
Back to this Ultimate breakfast burrito I made for us all to inhale. This is a two for one recipe post as you can make a large batch of kielbasa for dinner and then use what is leftover for breakfast or just grill it in the morning. If you grill the night before, it makes for a easy morning especially if you have guests.
I decided not to write up a recipe card for this post but show a quick video of how I assemble. It is very easy. Have a look!
To start, buy beef or polish kielbasas and marinate in your favorite barbecue sauce for at least 30 minutes. I like to chop into large sections and slice in half. Cook on the grill until its nice and brown, while its cooking baste with extra BBQ sauce.
Here you can see I was cooking flank steak too.
For the morning I save 2 or 3 strips of kielbasa and chop into bite size pieces and reheat for a few minutes in a pan.
Remover the kielbasa, and make up scrambled eggs, hasbrowns, shred some cheddar cheese, 1 fresh avocado sliced, salsa, and sour cream if you wish.
Roll up in a flour tortilla and ENJOY! If you have extra time and want to really impress people or just yourself, after you get the burrito rolled up and secured you can place it over a griddle/grill/or in a hot cast-iron to get the tortilla a nice golden brown. So good!
