The Best Pasta Salad

This is such a yummy and unique pasta salad. I love to serve it for a lunch or as light dinner with some French bread and olive oil.

The flavors are really beautiful together with a bit of cayenne pepper, truffle oil, and finished off with balsamic vinegar and sea salt. It is a really easy dish to prepare yet one that feels gourmet. Doesn’t get better than that!

Not to mention it looks stunning!

Ok let’s get started!

Ingredients:

  • 1/2 -3/4 box of penne pasta
  • 3 roma tomatoes, chopped small
  • 2 tbsp. onion or shallot, diced
  • 2 garlic cloves minced or 1 tsp
  • 1 tsp Italian seasoning
  • 1/8 tsp. of cayenne pepper
  • sea salt
  • 1 1/2 tsp white truffle oil
  • Baby spring salad mix
  • 2 tbsp. balsamic vinegar

Instructions:

  1. To start, prep the onion, tomato, and garlic.
  2. Get a pot of water going and add salt.
  3. Now in a large pan add 1 tbsp. olive oil over medium heat.
  4. Add the tomatoes, onion, and garlic. Season with the cayenne, Italian seasoning, and some salt. Cook for about 10-15 minutes.
  5. While that is cooking add the pasta to the water and cook until al dente. Reserving 1/4 cup of pasta water
  6. When the pasta is ready, add to the tomato mixture along with the reserved pasta water and the truffle oil.
  7. Mix all together and cook for about 1 minute.
  8. Plate the pasta and add a handful of spring mix on the top.
  9. Sprinkle with sea salt and drizzle on about 1 tsp or so over the spring mix.
