Ingredients
- 1 cup salted butter
- 3/4 cup brown sugar, packed
- 3/4 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 semi-sweet chocolate bar, chopped into bite size chunks- I like Ghirardelli brand
- 1 cup peanut butter chips
- 1 cup semi-sweet chocolate chips
- Sea salt – Maldon is the best
Instructions
Prepare the Brown Butter
- In a medium saucepan, melt the butter over medium heat. Stir constantly until the butter turns into a golden brown color and has a nutty aroma.
- Remove from heat and let cool to room temperature.
Mix the Dough
- In a large mixing bowl, combine the brown butter, brown sugar, and granulated sugar. Beat until creamy and smooth.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the 3/4 of chocolate chunks, save the rest for topping. Add the peanut butter chips, and chocolate chips until evenly distributed.
Bake the Cookies
- Preheat the oven to 375°F (190°C).
- Line a baking sheet with parchment paper.
- Using a large cookie scoop get a heaping amount of dough. Gently roll into a ball and drop the dough onto the prepared baking sheet, spacing them about 2 inches apart. Press a couple of chunks of chocolate into the top of the cookie dough.
- Bake for 13 minutes, or until the edges are golden brown and the centers are set. Do not overbake, as the cookies will continue to firm up as they cool.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. While they are still hot sprinkle them with sea salt. The salt is the perfect balance between sweet and salty so do not skip this part!
- The resting period allows the cookies to maintain their shape and texture.
