Tantalizing Turmeric Rice

This is no boring side dish I can promise you that. It’s packed with so much flavor you may just find yourself sitting at the table with a spoon chowing down on the whole bowl…. and if you do, I won’t judge!

Lets begin.

Ingredients:

  • 2 cups jasmine rice, rinsed
  • 2 cups vegetable broth
  • 1 tbsp butter
  • 1 tbsp extra virgin olive oil
  • 2 garlic clove, minced
  • 1 1/2 tsp turmeric
  • 1/4 cup yellow onion
  • 1 lemon
  • 1 tbsp chopped tarragon
  • 1 tbsp chopped parsley
  • salt and pepper to taste

Directions:

The very first thing is to rinse the rise in hot water, drain and repeat a few times. Heat a sauce pan to med-high and melt the butter and add the oil. Saute the onion until tender, then add the garlic.

Add rice, turmeric, and vegetable broth. Stir to combine. Increase the heat to a boil. Cover the pan with a lid, slightly off center as to release some steam unless the lid has a hole already in place.

Reduce heat and allow to simmer 15-20 minutes. After cooked, remove lid.

Now this part is very important. Remove from heat and set in a place to set. Place a kitchen towel over the pan and allow the rice to sit for at least 10 minutes. This will produce fluffy, soft, and perfect rice!

Add salt and pepper to taste. Squeeze the juice of half a lemon. Stir to combine. Put in serving dish and dress with chopped tarragon, parsley, and lemon slices (optional).
