Roasted Heriloom Tomato and Burrata Toast

The perfect appetizer or snack.

Its officially summer let the tomato recipes begin! I Loooove tomatoes and this toast is such a treat. Tomatoes are roasted with herbs and olive oil, then dressed on toasted sourdough with burrata, fresh basil, lemon oil, and balsamic glaze. Perfection!

Heirloom or beefsteak tomatoes are my favorite for summer and they come in a variety of colors. My advice is to get large ripe ones with no bruises. Just look how pretty they are. Getting ready to go in the oven.

How to make-

Ingredients: ( Makes 2-adjust accordingly)

  • 2-3 heirloom tomatoes, sliced
  • 3 garlic cloves, peels on
  • Olive oil
  • Lemon oil ( optional)
  • 1-3 burrata cheese ball, torn into pieces
  • 2 Sourdough bread slices, toasted
  • Fresh basil
  • Fresh thyme
  • Balsamic glaze
  • Salt & pepper

Directions:

  1. Set the oven to 450°F
  2. Line a baking sheet with the tomatoes and garlic.
  3. Season with salt and pepper, and thyme.
  4. Drizzle on olive oil and bake for 25-35 minutes. (Keep an eye on it so it doesn’t burn)
  5. Assemble- Rub the toast with peeled garlic.
  6. Layer on some roasted tomatoes.
  7. Now goes burrata and fresh basil.
  8. To finish drizzle on lemon oil and balsamic glaze.
  9. Enjoy!
