Flaky puff pastry with caramelized onion and herb Boursin Cheese. Layered with Yukon Gold potatoes, gruyere cheese, Swiss cheese, and spices!
I have made many savory galettes and my favorites always have potatoes. Well, I was in the grocery store and saw Boursin cheese gourmet spreadable cheese made a caramelized onion and herb blend.
I immediately had the idea to make this! It is SO good! I like to serve it as an appetizer, a snack, or with a meal. Meatballs and salad go well. I hope you love it as much as I do.
Let’s get started.
Ingredients:
- 1 puff pastry sheet, thawed
- 2 med Yukon potatoes peeled, and sliced thin
- 4 tbsp olive oil
- 3/4 package of Boursin caramalized onion and herb gourmet spreadable cheese
- 1/4 cup Gruyere cheese, shredded
- 1/4 cup Swiss cheese, shredded
- 1/2 tsp onion powder or flakes
- 1/2 tsp Herbs de Provence
- salt and pepper to taste
- 1 tsp minced chives
Directions:
- Pre heat the oven to 450°F
- Slice the potatoes on a mandolin or with a knife. Thin slices.
- On a piece of parchment paper add small sprinkle of flour and add the puff pastry. Roll the dough out, keeping the shape but just a bit thinner.
- Now move the dough to the baking sheet. Brush with 2 tbsp. of olive oil.
- Crumble the Boursin cheese on the pastry.
- Layer the potatoes on the pastry slightly overlapping. Leave a border or crust about a inch or so.
- Season with onion powder, salt, pepper, and Herbs de Provence.
- Sprinkle on the cheese.Â

Fold the dough, starting from the corners then the center and sides. It doesn’t have to be perfect just get the crust pulled up.
- Brush the pastry with the remaining oil.
- Bake for 20-25 minutes or until golden brown and the cheese is bubbly.
- Garnish with chives. (optional)
