Pork Belly Burnt Ends on the Smoker

Ingredients

  • 2 lbs pork belly, cut into 1-inch cubes
  • Yellow mustard (to use as a binder)
  • Your favorite BBQ rub
  • 5–6 pads of butter
  • BBQ sauce (any variety you love)
  • Optional: Brown sugar for that extra touch of sweetness

Instructions

  1. Prep the Pork Belly: Coat your pork belly cubes with yellow mustard. This helps the rub stick and adds a little tang. Next, give each cube a generous dusting of your favorite BBQ rub—don’t be shy!
  2. Smoke – Phase 1: Arrange the seasoned cubes on a wire rack. Fire up your smoker to 250°F and smoke the pork belly for 2 hours, letting that beautiful smoke do its work.
  3. Sauce & Butter: Once smoked, transfer the cubes into an aluminum pan. Dot the cubes with pads of butter, slather them with BBQ sauce, and if your taste buds crave sweetness, sprinkle brown sugar on top.
  4. Smoke – Phase 2: Return the pan to the smoker. Continue to smoke for another 1 to 1.5 hours, or until the pork reaches an internal temperature of 205°F and the edges are gloriously caramelized.
  5. Serve & Enjoy: Let the burnt ends rest for a few minutes before serving. Serve them hot—they’ll disappear fast! These are crowd-pleasers any day, but especially when the big game is on.
