Pancake Charcuterie

Breakfasts favorites all in one place!

My family loves breakfast and our favorite way to eat it is all spread out as a charcuterie with lots of selections. The star of the board is mini pancakes. Then you can build around it with a selection of your favorite breakfast meats, eggs, and fruit. I like to use bacon and sausage with deviled eggs. The key is easy to grab finger foods.

The pan is a Plett pan. HIGHLY RECOMMEND their cookware!

Here are some of my favorite deviled eggs-

Pancakes
  • 1 1/2 cup all purpose flour
  • 3 1/2 tsp baking powder
  • 1 tbs sugar
  • 1/4 tsp salt
  • 1 egg
  • 1 1/4 cups milk
  • 3 tbs butter, melted
  • Cooking spray
Directions:
  1. In a large bowl mix together the flour, baking powder, sugar, and salt.
  2. Make a well or hole in the bowl and pour in the milk, egg, and melted butter into the middle.
  3. Stir until smooth but do not over mix.
  4. Heat a lightly oiled griddle or pancake pan
  5. Scoop out about 1/4 cup – 1/2 cup batter and put it on a lightly greased (cooking spray) griddle or pancake pan.
  6. Cook for 2 minutes on each side or until golden brown.
  7. Move to a plate to keep warm and cover with foil.
  8. Arrainge on the board with all your favorite sides and toppings.
  9. ENJOY!
