Nachos with an amazing cheese sauce, ground beef, and all the toppings!Â
This is not any nacho dish; this is the BEST nacho dish! These nachos get an upgrade with my homemade nacho cheese sauce. We make a basic roux and add garlic powder, shredded cheddar, and Colby jack cheese! Finish is off with an incredible hot sauce made with Peruvian peppers. It has such a unique flavor that it brings out all the flavors in our nachos. Â

Of course you can always use your favorite hot sauce too. The best part about nachos is you can add all the toppings you like. I always opt for fresh guacamole, fresh chopped tomatoes, onions, sour cream, and cilantro. Â
Okay, let’s get started!Â
Ingredients:Â
- Ground beef taco meat, cooked with favorite taco seasoning. Â
- Tortilla chips Â
- 3 tbsp.. Butter Â
- 4 tbsp.. Flour Â
- 1 cup milk –more if needed Â
- 1 ½ cups cheddar cheese, shreddedÂ
- 1 cup Colby jack cheeseÂ
- ½ tsp garlic powder Â
- 2 tbsp hot sauce Â
- Salt to taste Â
- 1 small tomato, chopped small Â
- ¼ cup white onion, chopped small Â
- Pickled or fresh jalapeno slices Â
- Guacamole Â
- Sour cream Â
- Cilantro, minced-optional Â
Directions:Â
- Cook the ground beef with taco seasoning to your liking. Set it aside. Â
- Chop all the toppings and set aside. Â
- In a saucepan, on medium heat add the butter and let it melt. Â
- Now add the flour, garlic powder, and whisk until combined and thickened. Â
- Pour in the milk and whisk until smooth. Once it starts to bubble add the cheese. Â
- Whisk until smooth. You can add extra milk if needed. I do a little at a time. Â
- Continue to whisk until it is smooth and creamy. We want it to be thick but not too thick and not too thin. Â
- Add the hot sauce and a pinch of salt. Â
- Assemble the nachos. Â
- Layer a platter with chips, then add the taco meat on top and spread evenly. Â
- Now pour on the cheese sauce! Â
- Sprinkle on the jalapenos, tomatoes, and onions.
- Two giant spoonfuls of guacamole in the middle. Sour cream drizzled all over or you can plop spoonfuls in the middle with the guacamole.
- Finish with fresh chopped cilantro. (optional)
