Meatballs Sandwiches

Mouthwatering Meatball Sub!

Juicy meatballs soaked in marinara, a cheese sauce, and pesto spread all snuggled up on a French roll.

This is THE BEST meatball sub! I say that because we take time to make each part special, from the marinara to the pesto spread. Every part plays a role in complimenting the next ingredient. Now I will say this does take some time to make it all from scratch and you certainly can take shortcuts. Buying a marina and just melting mozzarella cheese will absolutely still make a killer sandwich!

HOWEVER, if you want to put the effort in, I promise its worth the time. You can do lots of prep ahead of time or even the day before. I like to make the marinara ahead of time and store up to 3 days in the fridge. The pesto sauce can be made ahead and even the meatballs! They can be stored in the fridge for a couple days as well.

How delicous does that look?!

Let’s get started on the sub!

INGREDIENTS:

  • Meatballs (recipe link above)
  • 1/2 the marinara recipe (recipe link above)
  • 1/3 cup of pesto sauce. You can make from scratch or buy in store. I love the Barilla rustic pesto with garlic.
  • 2 tbsp. mayonnaise
  • 1/4 tsp. garlic powder
  • 3 tbsp. butter
  • 1 tbsp. flour
  • 1 cup mozzarella, shredded
  • 1/4 cup milk
  • 4 French rolls or whatever sandwich bread you would like.

DIRECTIONS:

  1. After you get the Meatballs and marinara prepared, add the meatballs to the marinara sauce in a pan. Add 1 cup of water to the marinara/meatballs and stir. Put on low heat and stir every once in a while.
  2. Next lets prep the pesto sauce. In a small bowl add the mayo and pesto sauce. Mix well and set aside.
  3. Melt 2 tbsp. of butter and brush on the bread rolls. Toast in the oven for 8-10 minutes.
  4. While the bread is toasting get the cheese sauce going. In a small saucepan over medium heat add 1 tbsp. of butter and let it melt.
  5. Add the flour and whisk until mixed. Now add 1/4 cup of milk and whisk until smooth.
  6. Next goes the mozzarella cheese. Continue to whisk until the cheese is smooth and creamy.
  7. Add some salt, pepper, and garlic powder. Mix and turn on low.
  8. Assemble the sub.  Spread the pesto on the top/bottom roll. Add 3 meatballs on each roll and top with marinara sauce.
  9. Pour on the cheese sauce and ENJOY!
