Juicy meatballs soaked in marinara, a cheese sauce, and pesto spread all snuggled up on a French roll.
This is THE BEST meatball sub! I say that because we take time to make each part special, from the marinara to the pesto spread. Every part plays a role in complimenting the next ingredient. Now I will say this does take some time to make it all from scratch and you certainly can take shortcuts. Buying a marina and just melting mozzarella cheese will absolutely still make a killer sandwich!
HOWEVER, if you want to put the effort in, I promise its worth the time. You can do lots of prep ahead of time or even the day before. I like to make the marinara ahead of time and store up to 3 days in the fridge. The pesto sauce can be made ahead and even the meatballs! They can be stored in the fridge for a couple days as well.
How delicous does that look?!
Here are the links to my Italian meatballs, pesto, and marinara sauce.
Let’s get started on the sub!
INGREDIENTS:
- Meatballs (recipe link above)
- 1/2 the marinara recipe (recipe link above)
- 1/3 cup of pesto sauce. You can make from scratch or buy in store. I love the Barilla rustic pesto with garlic.
- 2 tbsp. mayonnaise
- 1/4 tsp. garlic powder
- 3 tbsp. butter
- 1 tbsp. flour
- 1 cup mozzarella, shredded
- 1/4 cup milk
- 4 French rolls or whatever sandwich bread you would like.
DIRECTIONS:
- After you get the Meatballs and marinara prepared, add the meatballs to the marinara sauce in a pan. Add 1 cup of water to the marinara/meatballs and stir. Put on low heat and stir every once in a while.
- Next lets prep the pesto sauce. In a small bowl add the mayo and pesto sauce. Mix well and set aside.
- Melt 2 tbsp. of butter and brush on the bread rolls. Toast in the oven for 8-10 minutes.
- While the bread is toasting get the cheese sauce going. In a small saucepan over medium heat add 1 tbsp. of butter and let it melt.
- Add the flour and whisk until mixed. Now add 1/4 cup of milk and whisk until smooth.
- Next goes the mozzarella cheese. Continue to whisk until the cheese is smooth and creamy.
- Add some salt, pepper, and garlic powder. Mix and turn on low.
- Assemble the sub. Spread the pesto on the top/bottom roll. Add 3 meatballs on each roll and top with marinara sauce.
- Pour on the cheese sauce and ENJOY!
