Mashed Potato Waffles!!

The absolute BEST way to use up leftover mashed potatoes.

Yes that is what you read, mashed potato WAFFLES! I rarely have any leftover because it is my favorite thing to eat but sometimes I do and with Thanksgiving coming up I figure this is the best time to share my recipe. Just look at these golden love stacks. MMMM!

 

Here is my mashed potato recipe The BEST Mashed Potatoes Ever!

Let’s jump right in!

INGREDIENTS:

  • 2 cups mashed potatoes
  • 1/2 cup all purpose flour
  • 1 cup shredded cheddar cheese (I love Tillamook)
  • 1 egg
  • 1/2 tsp baking powder
  • salt/pepper to taste or Black Truffle salt
  • 1 tbsp. chives, minced
  • 1/2 cup sour cream
  • cooking spray

DIRECTIONS:

  1. Mix the potatoes, flour, cheese, egg, baking powder, salt/pepper, and half the chives.
  2. Heat a waffle maker.
  3. Spray with cooking spray on top and bottom.
  4. Scoop half the mix onto the waffle maker, (or all of it if you have a 4 iron maker) put the lid down, and cook for 8 minutes or until golden.
  5. Move to a plate and cook the second one.
  6. Plate, and top with the sour cream, and remaining chives. I like to add cooked bacon and sometimes extra cheese too!
  7. ENJOY!!
