This super easy weeknight meal is sure to be thrown into the monthly rotation!
Everyone, including picky eaters will love this, plus its done and on the plate in less than a half hour. Can’t beat that!
Lets get started!
Ingredients:
- 1 pound beef kielbasa, sliced
- 1/4 cup onion, chopped
- 2 tbsp apple cider vinegar
- 2 tbsp imported german mustard or whole-grain mustard
- 1/4 cup extra virgin olive oil
- 1 pound frozen potato-cheddar pierogies
- 1/4 cup chopped parsley
- kosher salt and cracked black pepper to liking
Directions:
- Cook the kielbasa in a cast iron pan or skillet for about 10 minutes or until browned. on medium heat. Remove and set aside.
- On med heat again, add 2 tbsp of olive oil. Add the onions and pierogies. Season with salt and pepper. Cook until the onions are softened about 5 minutes. Turn the pierogies and onions, cook for an additional 6-8 minutes.
- Whisk together the mustard, vinegar and remaining oil in a large sized bowl. Toss the sliced kielbasa in the mustard sauce. Add the perogies and onions and toss to coat.
- Plate, and top with parsley.
