Jumbo Chocolate-Banana Muffins

Fluffy chocolate filled banana muffins with big round tops and cooked to perfection.

Banana muffins and bread are some of my favorite treats. Now add in chocolate and it gets even better! I love to make muffins with super round tops. The way to achieve this is fill the muffin tin to the top instead of ¾ of the way.

I like to use a Jumbo muffin tin, but you can use a regular muffin tin is you would like.  I tell you these are silky and delicious with LOTS of chocolate chips. Of course, you can add fewer if you like but I love them super chocolatey.

Okay, let’s get started!

Ingredients:
  • 4 ripe or over ripe bananas, mashed
  • 2 cups semi-sweet chocolate chips
  • 2 cups All-purpose flour
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 tsp baking soda
  • 1/2 cup butter, softened
  • 1/4 tsp salt
  • 1/2 tsp vanilla
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp apple pie spice
Instructions:
  1. Preheat the oven to 425F°
  2. Line a muffin tin with wrappers or grease well if you have no wrappers.
  3. Combine the flour, salt, and baking soda in a bowl. Set aside
  4. In a separate large bowl beat the 1/2 cup of butter and 3/4 cup of brown sugar with an electric mixer, kitchen aid, or by hand.
  5. Now add the mashed bananas, eggs, spices, and vanilla. Mix well.
  6. Pour the flour mix in with the banana mash and stir until combined.
  7. Fold in the chocolate chips.
  8. Fill the muffin tins to the top.
  9. Bake for 6 minutes then lower the oven temperature to 350ÌŠ. Bake for 15-20 minutes more. Stick a toothpick in the middle. If the toothpick comes out clean they are ready.
  10. Let them cool.
  11. Store in an airtight container for 3-4 days.
