These delightful classic sandwiches are a fantastic and refreshing lunch or snack. Â
However, we will not be making the classic version here. A mixture of whipped cream cheese, fresh dill, lemon zest, chives, and everything bagel seasoning will accompany thin slices of cucumber to make up this lovely snack. Â
A little history-Â
Cucumber sandwiches have been present in British afternoon tea since the 19th century. They are traditionally served on white buttered bread with the crusts removed. Modern cucumber sandwiches have mayo, cream cheese, spices, and even salmon. Cucumber sandwiches are often eaten in the summer months or in warmer climates, such as in parts of India where the cucumber actually originated from. Â
In the 19th century British army officers were served cucumber sandwiches in tea houses in India to keep them hydrated as cucumbers are made up of 96% water. The British officers brought back these dainty delights and quickly became part of Victorian High Tea. Which is obviously here to stay. They are easy to make, refreshing, and great to serve before a main course, teatime, or as a light lunch. Look how pretty they are. Â
Now here I garnished with thin radish slices and fresh dill. Let’s get started!Â
Ingredients:Â
Makes 2Â
- Â 4 slices of white bread, ends trimmed offÂ
- ¼ cup whipped cream cheese Â
- 1 tsp fresh dill, minced (more for garnish)Â
- 1 tsp lemon zest Â
- 1 tsp chives, fresh minced or dried Â
- 1 tbsp everything bagel seasoning Â
Preparation:Â
- In a small bowl combine the cream cheese, dill, lemon zest, chives, and seasoning. Mix well. Â
- Spread half of the mixture on 1 slice of bread. Layer with cucumber slices, top with another slice of bread. Continue with the remaining bread. Â
- Cut in half and then again to make small sized sandwiches. Â
- Garnish and serve. Â
