Easy Vodka Sauce Pasta Topped with Herb Ricotta

Pasta with vodka sauce is a classic Italian American dish that combines the richness of tomato sauce with the smoothness of cream and the subtle zing of vodka. When topped with a blend of ricotta, herbs, and parmesan, it becomes an exquisite gastronomic experience.

Rigatoni or penne is the most popular, but I experimented with La Fusilleria Meter Long Mafaldine Pasta. (Seen in photos) It is from Gragnano Italy. I got it from World Market. You can order online if you would like to try or visit a local European market. No matter what pasta you choose this recipe is a testament to the power of simple ingredients and straightforward preparation. Ingredients

  • 400g of pasta
  • ¼ onion or shallot, chopped small
  • 1/2 tsp salt
  • ½ tsp pepper
  • ¼ tsp red pepper flakes
  • 1  24.5 oz Passata tomato puree
  • 1/2 cup chicken or vegetable broth
  • 1/3 cup of vodka
  • 1 tbsp tomato paste
  • 1/2 cup heavy cream
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 cup ricotta cheese
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 1 cup grated parmesan cheese
  • Extra parmesan for serving

Step 1: Cook the Pasta

Fill a large pot with water and bring it to a boil. Add a generous amount of salt and the pasta. Cook according to the package instructions until al dente. Drain the pasta and set aside.

Make the Sauce

  • In a skillet add 1 tbsp oil, onion, minced garlic over medium heat. Sauté until fragrant, about 1 minute.
  • Sprinkle on the salt, pepper, and red pepper flakes.
  • Pour in the tomato sauce, tomato paste, and vodka, and broth. Turn the heat to med- high.
  • Add the broth. Simmer until it begins to thicken.
  • Turn the heat to medium low. Add the grated Parmesan cheese and heavy cream.
  • Stir until it is melted and incorporated.

Prepare the Ricotta Topping

In a medium bowl, combine the ricotta cheese, chopped basil, chopped parsley, and 1/2 cup grated parmesan. Mix well until all the ingredients are evenly distributed.

Step 6: Combine Pasta and Sauce

Add the cooked pasta to the sauce, tossing gently to coat each piece thoroughly. Ensure the pasta is well-covered with the creamy vodka sauce.

Step 7: Serve and Garnish

Plate the pasta, and generously dollop the ricotta mixture on top. Sprinkle extra parmesan cheese over the dish for added flavor.

Serving Suggestions

This easy vodka sauce pasta topped with ricotta mixed with herbs and parmesan pairs beautifully with a crisp green salad and a loaf of garlic bread. For a complete dining experience, serve with a glass of chilled white wine or sparkling water with lemon slices.
