Easy Meatball Lasagna roll -ups

Love the lasagna but don’t have time to make it ? Well I got your back!

These rollups have all the flavor and comfort you crave except easier to make, cook, and serve! They are a great option if you are having guests for dinner as they are already portioned out and easy to eat. You will have plenty of time to spend with your family and guests… or lock yourself in the bathroom with a glass of wine… I mean whatever, I’m not judging.

Ok lets get started!

INGREDIENTS:

  • 8-10 pre-cooked meatballs, crumbled or chopped into bite sizes
  • 12 noodles cooked to package directions
  • 24 oz marinara sauce
  • 15 oz ricotta cheese
  • 1 egg
  • 3 tbsp parsley, chopped
  • 1 tbsp chopped basil
  • 1 1/2 tsp salt
  • 1/8 tsp nutmeg
  • 3/4 lb of mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, shredded

DIRECTIONS:

Heat oven to 375 degrees. Cook noodles in large pot of water heavily salted according to the package instructions. Drain and fill the pot with cold water to stop the noodles from sticking together.

In a large bowl mix together the ricotta, egg, nutmeg, salt, 2 tbsp of parsley, and 1/2 cup of mozzarella cheese.

In a large baking dish spread 1/2 cup of marinara on the bottom of the dish. Lay out the strips of noodles. Spread 1/4 cup of ricotta mixture on each noodle followed by a handful of crumbled meatballs. Spoon 2 tbsp of marinara over each the meatballs followed by a handful of shredded mozzarella.

Roll each noodle strip up and cover with remaining mozzarella and parmesan cheese.

Spray aluminum foil with pam spray and cover the pan careful not to touch the cheese.

Bake at 375 degrees for 30-40 minutes.

Remove foil, and pop back in the oven on broil for 2 minutes.

Let cool for 10 minutes. Garnish with remaining parsley and basil.

Spread a heaping spoonful of marina on the plate, place a pasta roll down, and sprinkle with shredded or grated parmesan cheese.
