Fresh salad with couscous, cucumber, vegetables, feta, and a fabulous herby dressing.
I don’t know about you but I love fresh and healthy salads all Summer long. This one is soooo yummy! Not only is it yummy but super easy. Let’s make it.
Ingredients:
- 1 cup cooked and cooled pearl couscous
- 1 cucumber peeled, and chopped small
- 1 red bell pepper chopped, small
- 2 tps red onion, chopped small
- 1/4 cup pitted Kalamata olives, chopped
- 1/2 cup feta cheese
- 1 tbsp Olive oil
- 1 tbsp red wine vinegar
- 2 tbsp balsamic vinegar
- 1/2 tsp sugar
- 1 tbsp fresh cilantro, minced
- 1 tsp fresh dill, minced
- Salt and pepper to taste
Directions:
- In a small bowl combine the olive oil, vinegars, sugar, herbs, salt and pepper.
- Whisk and set aside.
- In a large combine the couscous, cucumber, bell pepper, onion, olives, and feta. Pour on the dressing.
Toss the salad and serve! Store covered in the refrigerator for up to 3 days.
