Chorizo Pizza!

Gourmet flavor that is crunchy, spicy, sweet, and smoky. This pie has it all!

I created this pie because I had chorizo that needed to be used and I just needed something different. A spicy meat pie with lots of fresh veggies it was. If you make the dough it is a bit of prep, but completely worth the time. Now I love to grill my pizzas. If you have never done it I highly suggest giving it a try.

I also like to use a pizza stone. They are reasonably priced and can be used in ovens, grills and even camp fires! The pizza stone holds the heat more evenly, and the porous surface draws water out the wet area of the dough as it cooks. The charcoal gives that incredible delicious flavor. Now if you don’t have a charcoal grill you can put soaked hardwood chip in aluminum foil, poke holes in it, and set it in aluminum foil loaf pan. Place on the grill with the pizza, close the lid and boom you will get a nice smoky flavor.

For this recipe and all my pizza recipes I use this dough. Very simple and tastes so much better than store bought. If you aren’t in a hurry, give it a try. You get 2 large pizzas out of the batch.

I chose to mix 1/2 cup of store bought pizza sauce and 1/2 cup of roasted tomatoes salsa style. I used this as my sauce base and it was a perfect blend. You can choose whatever veggies you would like to add or take away to your taste but I must say this combo creates and amazing flavor profile. Red onion, orange sweet mini pepper, tomato, and a jalapeno. For cheeses we will be using shredded mozzarella and shredded parmesan. A little oregano for and jalapeno infused olive oil sprinkled on right before cooking. Hungry yet?

Chorizo Pizza!

Ingredients

  • 1 9 ounce chorizo, cooked, drained, and cooled
  • 1 tbsp olive oil
  • pizza dough
  • 1/8 red onion, sliced thinly
  • 1 orange (or any color you want) sweet pepper, thinly sliced
  • 1 roma tomato, thinly sliced
  • 1 jalapeno, thinly sliced
  • 1/2 cup pizza sauce
  • 1/2 cup canned roasted tomatoes/ salsa style can use salsa instead
  • 3/4 cup mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, shredded
  • 1/2 tsp dried oregano
  • drizzle of jalapeno infused olive oil can use regular olive oil

Instructions

  • Get the dough on your pizza stone or pizza pan. Brush the dough with 1 tbsp of olive oil.
  • Mix the pizza sauce and salsa. spread over the oiled dough.
  • Sprinkle the pizza with 3/4 cup of mozzarella cheese.
  • Next sprinkle on the chorizo as evenly as possible .
  • Now the tomatoes
  • Now the sweet pepper
  • Next the onion and jalapeno
  • Parmesan cheese…
  • Oregano and oil.
  • Cook on the grill on high heat for 10-15 minutes or until the cheese is bubbly and the crust is cooked.
  • If you are not grilling, cook pizza in the oven for 15- 20 minutes at 425°
