An egg fried in green onions and chili crisp then placed on top of a sourdough slice with guacamole and some fresh baby spinach. A little more chili crisp to top and garnish with green onions!
This hits every craving I have in the morning. I’m a huge fan of chili crisp so naturally I knew it needed to go with my favorite meal, Breakfast! I love breakfast and always looking for new ways to make tasty bites. You can buy the chili crisp in most stores, I use LAOGANMA brand. If you like spicy and crunchy this is the recipe for you.
Let’s get started!
This is for 1 but obviously make as many servings as you need/mouths to feed.
INGREDIENTS:
- 1 EGG
- 1 tbsp. butter (I love Tillamook creamy sea salt butter or Kerry gold)
- 1 Green onion, sliced
- 1 heaping tablespoon of chili crisp plus more to topping
- Sourdough bread, sliced
- guacamole or fresh avocado, sliced
- As much spinach as you want
- salt and pepper to taste
DIRECTIONS:
- Heat a small pan on medium heat. Add the butter and green onions.
- Cook for 1 minute the add the chili crisp.
- Let that cook for a couple minutes and then crack the egg right in the middle of the crisp/onion mix.
- Season the egg with salt & pepper.
- Cook the egg for 3 minutes for a runny egg, 6 for a hard.
- Toast the bread, butter and spread on the guacamole or avocado. Next goes spinach and top with the egg/onion crisp.
- Drizzle on some more chili crisp and some green onions.
