Ingredients
- 1 rotisserie chicken breast, chopped
- 3 potatoes, cubed
- 1 cup frozen peas & carrots (they come in 1 bag together or fresh)
- 1 onion, 2 celery stalks, chopped
- ¼ cup parsley
- ½ cup butter + ½ cup flour (for roux)
- ¾ cup white wine
- 2 cups chicken stock
- ½ cup heavy cream
- 1 tbsp Italian seasoning
- 1/2 tbsp lemon pepper
- 1 tsp garlic powder
- 1 tsp salt
- 1 tsp pepper
- 1 sheet puff pastry, thawed (cut into 4–6 squares to fit your bowls)
- 1 egg (for egg wash)
- ¼ cup olive oil
Instructions
- Heat olive oil in a large skillet. Sauté onions, celery, and potatoes until just tender.
- Add frozen peas & carrots, cooking for two more minutes.
- Pour in white wine, chicken stock, and your chosen seasonings. Allow the mixture to simmer gently until it thickens and the vegetables are fully cooked.
- Add the chopped rotisserie chicken and heavy cream. Stir gently to combine, letting the flavors meld.
- In a separate bowl, stir together melted butter and flour to make a smooth roux. Add this to your pot and mix well until the sauce is creamy—this step is key for rich texture.
- Sprinkle in chopped parsley for a burst of freshness.
- Ladle the filling into oven-safe bowls. Top each bowl with a square of thawed puff pastry, trimming to fit if needed. Brush lightly with beaten egg for a glossy golden finish.
