Chicken Caesar Sandwiches!

Healthy grilled chicken breast with citrus seasoning, a delicious Caesar spread that has Dijon, red pepper flakes, and fresh lemon zest. This sandwich is layered with tomato slices, romaine lettuce, and swiss cheese on a French baguette.

My favorite part is how fresh and flavorful this is. I love finding new ways to enjoy classic foods. It tastes just like the salad but now made into a sando. Chosen Foods sent me some of their amazing products to use and I knew this was the perfect recipe to try them out. I used their avocado oil, mayo, and dressing. Now I grilled my chicken breasts but you can always bake them instead.  Just look at this yumminess.

This is a messy one but I promise it is worth it.  It makes great Spring and Summer meal. I like to serve with soup, chips, or tater tots.

Chicken Caesar Sandwich

Ingredients

  • 2 Chicken breast, cut in half lengthwise, making 4 breasts
  • 2 tbsp. oil I used Chosen Foods avocado oil
  • 1 1/2 tbsp. lemon zest
  • 1 tsp lemon pepper I use Mrs. Dash, salt free
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 cup Caesar dressing I used Chosen Foods
  • 1 heaping tbsp. mayonnaise I used Chosen Foods
  • 1/4 cup parmesan cheese, grated
  • 1/4 tsp red pepper flakes
  • 1 large tomato sliced into 8 slices
  • 1 cup romaine lettuce chopped
  • 6 slices swiss cheese
  • 2 loaves French baguettes I use La Brea Baking French Baguette, twin pack

Instructions

  • Let's start by brushing the breasts with oil on both sides.
  • Mix 1 tbsp., of the lemon zest, 1/2 tsp. salt, 1/4 tsp. black pepper, and 1 tbsp. lemon pepper in a small bowl.
  • Sprinkle on the chicken breasts, both sides.
  • Grill or bake the chicken. However you would like to cook it.
  • To make the spread mix together 1/4 cup dressing, 1 heaping tbsp. mayo, 1/2 tbsp. lemon zest, 1/4 cup parmesan, and red pepper flakes in a bowl.
  • Now let's assemble.
  • Cut the baguettes in half, then put the spread on the top and bottom of the bread loaves.
  • Next goes the tomatoes
  • Then the lettuce, chicken, and swiss cheese.
  • Top with the other half of the bread loaf.
  • ENJOY!
