A simple and easy dessert that is great to whip up for unexpected guests, weekends, or anytime you want a quick treat.
Clafoutis is a baked French dessert of fruit, traditionally black cherries arranged in a buttered dish and covered with a thick pancake or flan-like batter. The Clafoutis is dusted with powdered sugar and served lukewarm, sometimes with cream. The best part is you can use any fruit. I love cherry and blueberry the most.

Ingredients:
- 1 tablespoon butter at room temperature
- 4 large eggs
- 1 1/4 cups whole milk
- 3/4 cup all-purpose flour
- 2/3 cup sugar
- 1 tablespoon vanilla extract
- 2 cups cherries (or any other fruit) you can use frozen.
- Powered sugar for sprinkling
- Whipped cream or vanilla ice cream (optional)
Directions:
- Preheat oven to 350 degrees and butter a large 9×13 baking dish or cast iron pan.
- In a blender or food processor add all of the ingredients minus the berries. Blend until smooth.
- Pour into the baking dish and then drop the berries all around the pan, try to make it even.
- Bake until golden brown. 45-60 minutes. It should resemble the consistency of flan.
- Sprinkle with powered sugar all over.
- Serve immediately as is, with cream, or even vanilla ice cream.
