Cheddar Biscuits and Gravy -Keto style

My favorite breakfast or brunch meal ever! 

This is my FANTASTIC low carb version. The biscuits are delicious on their own and can even be a great dinner roll too! 

This gravy is so satisfying I want to pour it over everything. I am a huge fan of lavender, and I am always finding ways to incorporate it into my food. My secret spice here that just gives this gravy and undeniable savory pop is Herbs de Provence with lavender. Do not skip this step. You can find the spice in most grocery stores. 

Ingredients:

Biscuits-

  • 2 cups paleo flour
  • 1 tbsp swerve
  • 1 tbsp baking powder
  • 1/2 tsp kosher salt
  • 1 cup heavy cream
  • 1/2 cup butter, melted
  • 1 1/2 cups sharp cheddar, shredded

Topping-

  • 3 tbsp butter, melted
  • 1 tbsp parsley, chopped
  • 1/2 tsp garlic powder

Directions:

Preheat oven to 450 degrees F. Line a baking sheet with parchment paper. In a large bowl mix the first 4 ingredients. In a second bowl combine the remaining ingredients and whisk well. Slowly add the flour mixture folding in.

With a large spoon or 1/4 cup measuring cup, scoop and place batter on the baking sheet at least and inch apart. Cook for 10-15 minutes. While the biscuits are cooking whisk together the topping mixture. Remove the biscuits when done and move to a cooking rack. While still warm brush the tops with the butter mixture.

Gravy-

  • 1 pound ground breakfast sausage
  • 1/2 tsp xanthan gum
  • 1 tbsp herbs de Provence with lavender
  • 1/8 tsp red pepper flakes
  • 1 cup chicken stock
  • 2 cups heavy cream
  • 1/2 tsp salt
  • 1/2 tsp pepper

Heat a skillet on med-high heat. Add the sausage and cook until browned, drain grease and return to skillet. Sprinkle the xanthan gum over the sausage, mix and let thicken slightly. Add the herbs de Provence, red pepper flakes, and chicken stock. Mix for about 2 minutes, when the sauce begins to thicken add the heavy cream, salt and pepper. Continue stirring until the sauce coats the back of a spoon.

Remove from heat. Plate 2 biscuits and pour the sauce over.
