Okay okay I know its not the same… but I tell ya it has the texture and taste you crave when you are on a low carb diet, and if you are on a low carb/Keto diet these bad boys are a must have!
I have a few different ways I make these and the best technique I found so far is to mix the ingredients in a food processor until smooth then heat butter into the saucepan and add the mixture to warm and get the cheese and butter gooey….
Ingredients:
- 1 Cauliflower head, florets chopped into bite sized pieces
- 3 garlic cloves, sliced
- 5 tbs butter
- 1/4 cup parmesan cheese
- 1/4 cup heavy cream
- 1/3 cup sour cream or greek yogurt
- 1/2 tsp rosemary, minced
- salt and pepper to taste
Directions:
1st order of business is to chop a head of cauliflower into bite size pieces as pictured below.

Steam or boil the bite size forets, drain, and let cool slightly. After the florets have cooled lay them out onto a kitchen towel and squeeze all the excess water out. You can use tongs if they are still too hot.

Next step is to put the florets into a food processor. Add the cheese, heavy cream, sour cream, 4 tbs butter, garlic, rosemary, salt and pepper.

Blend until smooth. Warm 1 tablespoon of butter in the saucepan you boiled the florets in. Mix until blended and warm. Plate, top with a pad of butter and chives!

This post is so helpful! I am on a low carb diet and I am always looking for new recipes to try. The recipe for the low carb/Keto friendly cheesy cauliflower florets sounds amazing. I definitely want to try it out! What would you suggest as a good side dish to pair this with?
These are a great low carb option. Roasted chicken, steak, or give my whiskey chicken a try to pair with.
