Soft gooey chocolate cookie rolled in crushed candy canes.
A good roll in sugar, a quick bake and boom, Delicious perfect Holiday cookies that are sure to become a family tradition. These are great ones for the kids to help with too. It’s fun to roll the dough balls in the sugar and makes for a fun evening of memories.
Okay let’s get started!
Ingredients
- 2 cups flour
- 1/3 cup cocoa flour
- 1/2 cup butter
- 3/4 cup brown sugar
- 1 cup granulated sugar, divided
- 2Â eggs
- ¼ cup crushed finely candy canes (I use the small ones)
- ½ tsp peppermint extract
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup powdered sugar
Instructions
- Preheat the oven to 350°.
- Line a baking sheet with parchment paper and set aside.
- In a bowl combine the flour, cocoa powder, baking powder, and salt. Stir and set aside.
- In a separate mixing bowl combine the butter, brown sugar, and 1/2 cup of granulated sugar. With a hand mixer or kitchen aid, mix until light and fluffy. Scrape the bowl down and add the eggs.
- Beat well then add the exract. Mix well.
- Combine the flour mix with the wet mix and beat together until well combined.
- In a shallow bowl add 1/2 cup of granulated sugar and the candy canes. Mix.
- In a separate shallow bowl add the powdered sugar. Using a tablespoon, scoop out the dough and roll it into a ball.
- Next roll the ball in the candy cane sugar mix.
- Then the powdered sugar.
- Continue with all the cookie dough, placing the balls about a inch apart on the baking sheet.
- Bake for 10 minutes or until the cookies have cracked. We want them to be a little gooey inside still.
