A potato lovers dream!
The name Hasselback comes from a restaurant in Stockholm, Sweden, named Hasselbacken, where the recipe for Hasselback potatoes was first introduced in the 1940s.
There are so many different variations of this lovely dish but today we will be making a brown butter with cheddar. Brown butter on spuds is a dream team! My husband says this is a dish all on its own, because of how satisfying it is. The butter itself is easy to make, you just need all your attention on it because it will burn in a flash.

Brown Butter Hasselback Potatoes!
A potato lovers dream! These beauties are stuffed with cheddar cheese and covered in brown butter for a perfect nutty flavor.

Ingredients
- 4 med-large russet potatoes, scrubbed
- 1/2 cup salted butter
- sliced cheddar cheese
- kosher salt Smoked salt from Tuckers Pepper Company is fantastic! Look them up online.
- black pepper to taste
Instructions
- Let's start with the brown butter.
- This is a very important step but if you mess up its ok, just throw it away and try again! To make the brown butter we will heat a sauce pan on medium heat.Add the butter, and stir. We want to melt the butter and get it to a very light golden brown. I can burn SO QUICKLY so keep all your attention here.As the butter is cooking, stir frequently and just watch for it to start to turn color. As soon as you see it start to change, pull it off the heat and into a bowl.If you happen to go too far and its dark brown, you burnt it and it will not taste good. Throw away and try again.I know it sounds intimidating but I promise it isn't, just a matter of keeping a close eye. You can do it!
- Pre-heat the oven to 350°
- Now onto the potatoes. Using 2 wooden spoons, lay them on each side of the potato and slice down to till the blade touches the spoon. This will give slits to fill with the cheese. NOTE* the 1st 2 slices and last 2 slices just eye it so you don't cut through.
- Hopefully these photos will be a good guide.
- After the potatoes are slices let add the cheese! I like to cut thin and space them every other or 2. That is completely up to you. Just get em in there.
- Place the potatoes in a cast iron pan or baking dish
- Now brush them generously with the butter, really get in there and soak them. (Save some for after they cook)Sprinkle with salt and pepper.
- Bake for 40-50 minutes or until golden brown. Brush with the butter right after you take them out and serve!
- You can garnish with parsley. Top with parmesan or more cheddar cheese, scallions, bacon, sour cream... I mean the possibilities are endless.
